Avocado in Pudding? What? Dig in!

Chocolate Avocado Coconut Pudding – 

Get ready to dig into this delicious AND healthy pudding. Check out this great recipe that is loaded with minerals and vitamins-this beats the packaged cookies and candies any day of the week.  As always, try to source organic for all ingredients….

Ingredients needed:

2   ripe avocados, (great for healthy fats!) peel and remove the pits

6   dates with the seeds removed

½   cup water

½  cup organic coconut cream I like THIS one

½  cup cocoa powder–I substitute organic Cacao powder instead of processed cocoa powder to get higher antioxidant and nutritional value—I like THIS one.

¼  cup shredded coconut—Coconut in any form-as long as it’s organic-provides excellent benefits. I like THIS organic shredded coconut

3  tablespoons organic maple syrup—Look for PURE maple syrup but, keep in mind, syrup-no matter the form-will add to your daily sugar content so remember to add it to your daily total. I like THIS Maple Syrup because it’s organic, pure and not watered down like cheaper versions

A pinch of sea salt—it’s a good idea to always use Sea Salt over table salt that has been processed and bleached

Directions:

Soak the dates in a half cup of water approximately 30 minutes. When they are softened, add the dates with the water in which they were soaked into the blender with your other ingredients. Blend well until smooth and creamy.

You can freeze these in moulds to make “pudding pops” OR they can be served in cups and enjoyed as a pudding—either way you will have a healthier option for your sweet tooth!
